Apricot Kebabs

Apricot Ale Vinaigrette
- ¼ cup Apricot Ale
- ¼ cup oil
- 1/8 cup rice wine vinegar
- 1 clove garlic, minced
- 1 shallot, minced
- 1 tsp salt
- 1 tsp pepper
- ½ cup chopped herbs; parsley and thyme
Skewers
- 3 cups Apricot Ale
- 1 red onion
- 1 red bell pepper
- 1 green bell pepper
- 1 cup dried apricots
Directions:
Vinaigrette
- Whisk all ingredients together and chill
Skewers
- Hydrate dried apricots in Apricot Ale for 1 hour
- Cut onions and peppers into 1 inch bite sized squares
- Alternate onions, peppers, and apricots on an 8” skewer
- Grill until vegetables are soft and serve with Apricot Ale Vinaigrette as a dipping sauce
