Red, Hefeweizen and Blue Burger

serves 4
Hefeweizen Aioli
- ¼ cup Hefeweizen
- 1 cup mayonnaise
- 1 tsp lemon juice
- 1 tsp salt
- ¼ tsp ground white pepper
Mix all ingredients and chill.
Hefeweizen cucumber relish
- 1 cucumber, peeled, seeded and small diced
- ½ shallot, small diced
- ½ jalapeno pepper, small diced
- ½ medium red pepper, small diced
- ¼ cup Hefeweizen
- ¼ cup white wine vinegar
- 1 tbsp lemon juice
- 1 ½ tsp corriander
- ½ teaspoon salt
- ½ teaspoon black pepper.
Combine all ingredients and chill.
Red, Hefeweizen and Blue Burger
- 4 tbsp Hefeweizen Aioli
- 4 tbsp Hefeweizen cucumber relish
- 2 lbs lean ground beef
- 1 ½ tbsp Worcestershire sauce
- ½ tsp salt
- ½ tsp pepper
- ¼ cup cream cheese
- ½ cup blue cheese
- 1 red onion; sliced ¼ inch thick
- 4 jumbo Hamburger buns
Directions:
- Combine ground beef, salt, pepper, and Worcestershire. Divide into 8 equal burger patties.
- In a separate bowl, combine cream cheese and blue cheese. Divide into 4 equal cheese patties. Cheese patties should be smaller in diameter than burger patties.
- Place cheese patties onto 4 of the burger patties. Cover cheese patties with the remaining 4 burger patties to create 4 cheese stuffed burger patties. Be sure to seal edges of burgers to completely hide the cheese in the middle and keep it from oozing out while grilling.
- Heat grill to medium high and grill burgers until done.
- Grill onion slices on one side while burgers cook.
- Toast buns.
- Slather 1 tbsp of Hefeweizen Aioli on each set of buns. Place burger on bottom bun, place grilled onions on top of burgers, and top each with 1 tbsp Hefeweizen cucumber relish.
