Hefeweizen Jerk Tuna with Hearts of Palm Salad

Serves 8 people
Haywire Jerk Tuna
- 4 fl oz Pyramid Hefeweizen
- 2 lb. Ahi tuna, cut into 8 pieces
- 2 tsp ground mustard
- 2 tsp ground white pepper
- 2 tsp garlic powder
- 2 tsp chili powder
- 1 tsp ground cinnamon
- 1 tsp dried thyme
- 1 tsp salt
- 4 tbsp vegetable oil
Hearts of Palm Salad with Apricot Ale
- 2 12 oz. cans hearts of palm, drained and sliced
- 6 tomatoes, sliced into wedges
- ½ cup black olives, sliced
- 2 cucumbers, sliced thin
Dressing:
- 4 fl oz. Pyramid Apricot Ale
- ½ cup olive oil
- 2 tbl white wine vinegar
- 2 tsp black pepper
- 2 tsp sugar
- 2 tsp salt
- 1 tsp thyme
- 1 tsp ground mustard
Directions:
Tuna Preparation:
Combine spices and Hefeweizen in a bowl. Coat all sides of the tuna with the rub. In a skillet on high heat, quickly sear all sides for rare tuna, or cook longer for more doneness. Slice tuna into thin slices and chill. Serve cold over Hearts of Palm Salad.
Salad Preparation:
Whisk together dressing ingredients in a bowl. Toss in salad ingredients. Serve cold with Hefeweizen Jerk Tuna.
